Method of preparation

Blend the honey with 250ml of Gallo D.O. Madeira Wine Vinegar.

Put in a pot over heat and boil gently until the mixture is cut in half.

Cool and set aside.
Chef tips
This reduction is great for all sorts of dishes, whether as a decoration or as a way of adding flavour. You can replace the Gallo D.O. Madeira Wine Vinegar with any other Gallo Vinegar, for instance, a balsamic one.
